Let' make some Russian crepes 'blini'. VIDEO recipe!

Blini! Thin, elastic, porous, sweet or savoury - these magical little pieces of sunshine are incredibly delicious and super easy to make.


I like to make blini without using any yeast. If you do otherwise, please let me know and suggest the benefits of using yeast. I'm always open to experiments.


For the blini like in this video, you will need 2 eggs, 1 cup of flour, a teaspoon of salt, a teaspoon of sugar, milk depending on the consistency, 2 tablespoons of vegetable oil. You will need butter for frying the blini. For the toppings, sour cream is a must. Use any favourite jam for a dessert version. Use salmon, creme cheese and dill for the savoury version. Use caviar and champagne for special occasions. :))))


You can either go with adding dry ingredients to liquid ones or the other way around as I did. Mix flour, salt, sugar, vegetable oil and eggs. Add milk, until the consistency is thick like a hollandaise sauce (maybe a bit runnier). I processed the batter through a sieve for a fine result with no lumps. The more you stir the batter by lifting and re=pouring it with a ladle, the more oxygen will mix into it and the more little dots will appear on your blini when pan-frying them, making them porous and extra delicate.
